It has been raining here forever! Okay, maybe not forever, but, for a long time. I would love to see the sun right now.
Sunshine
How about some blue skies for a change?

For today, I may just have to make do with an Orange Sunshine Cake

Today’s Lagniappe: Orange Sunshine Cake
A little piece of sunshine on a plate!
1 pouch Betty Crocker supermoist Jello cake mix
1 jar (10 oz.) orange marmalade
2 tsp. grated orange peel
Glaze below
Heat oven to 350 degrees. Grease and flour 12 cup Bundt cake pan. Prepare cake mix as directed on package except decrease water to 1 cup and add marmalade and orange peel. Bake until cake pulls away from side of pan and springs back when lightly touched in center, 45-50 minutes. Cool 10 minutes. Remove from pan and cool completely. Spread with glaze, allowing some to drizzle down side. Garnish with mint leaves and orange peel if desired.
Glaze:
Start with 3/4 cup powdered sugar and 2 teaspoons orange juice. Blend until smooth. May add more of each for more glaze. Also add a small amount of orange peel if desired.

I’m confused about the cake mix this cake starts off with, is it a yellow or white cake mix? Do you follow the directions of the manufacturer on the box, plus add the other ingredients? I can’t find any such exact cake mix on Betty Crocker’s site.
Yummy and I like easy too!
Joyce
Sounds really tasty!
LOVE your blue sky shots!
Christi, your cake looks scrumptious. I’ll bet it’s as tasty as it is delicious. I love that it is so easy to make. Have a great day.
Christi..What flavor cake mix do you start out with? Yellow, or white? I use Duncan Hines Orange Supreme Cake mix for my Necterine cake recipe. It is very similar to yours. Can I post it here or would you rather me send it to you through email?
I just bought two mini bundt pans and would like to try them and this cake recipe sounds perfect. I can also use my mini loaf pans too. I keep thinking if I make smaller size cakes, we won’t pig out as much. Wishful thinking; there’s a method to my madness!
I made an Orange necterine cake that is good. Will have to send you the recipe. Very similar. Orange peel? Can I use the zest that comes in a jar from McCormick’s spice section instead of buying an orange to get the fresh peel/zest?
Wow, you take some lovely photos!
Christi, I’ve never seen this recipe! It looks incredible. And yes I am going to try it. Thanks.
Debbie
Yuuuuuuuummmm. I just love the sound of it.
Visiting from Julia’s party.

I talked to my son who lives in San Diego (perfect weather and always sunshine) and told him we were having a cool rainy day. He was envious of a rainy day!
I know how you feel — it rained pretty much all summer long here. At least September has been relatively dry and warm so far
Hope you have sunny skies heading your way

This looks so nice and tasty! Baking on a rainy day is always special. Eating a slice of cake while enjoying a cup of tea is awesome.
I love the neat cakes that start with the box mixes but end up something special!
This is the perfect dessert for a rainy Southern day. I love the addition of the marmalade!
This sounds good — I’ll have to try it!
Christi-We could certainly use some sunshine here–in a cake or anywhere else! It looks and sounds delicious and the cake plate reminds me of mine (which was my grandmother’s). beautiful!
